English Royalty Chocolate Chip Scones

Well, I found the perfect scone recipe to celebrate tomorrow's royal nuptials. These scones will surely  be delicious! Here's the recipe in case you want to make your own.

English Royalty Chocolate Chip Scones

1 3/4 cups all purpose flour
1/3 cup white sugar
2 tsp. baking powder
1/2 tsp salt
5 tbsp. unsalted butter, chilled and cubed
1/2 cup miniature semisweet chocolate chips
3 tbsp. orange juice

1. Preheat oven 400 degrees. Spray baking sheet with nonstick cooking spray.
2. In a large bowl, whisk together the flour, sugar, baking powder and salt. With a pastry blender or a large fork, cut in the butter until the mixture resembles coarse crumbs. Stir in the chocolate chips. Mix in the orange juice to form a dough.
3. Turn out the dough on a floured surface. Pat or roll into a 9 inch circle about 1/2 inch thick. With a 2 1/2 inch fluted biscuit cutter, cut out 12 scones, pushing the dough scraps together for the last few, if necessary. Transfer scones to baking sheet.
4. Bake in a preheated oven until golden brown, about 12 minutes. Move to wire racks to cool.

132 calories, 5 grams fat per scone~

Note and changes
More orange juice and butter may be necessary to form dough. Add in small increments.

Yesterday horrific tornadoes and storms ripped through several states,cities, and towns, including some close to where I live. The devastation is monumental. Lives, homes and businesses were lost. The city I live in was spared from these vicious storms. Thank you, Lord.

Please pray for all those affected by yesterday's tragedy.

The Royal Wedding



It was 1981, I was eleven years old, and in the sixth grade... I was in awe of all things "royal." I got up at 5am to watch Diana and Charles marry. It was the most beautiful wedding I had ever seen. And the dress, Oh my goodness -total 80's fantasy!

That year for Christmas I got three hardcover books on Diana and the royal wedding. My favorite Christmas gifts that year.

Now, my 12 year old daughter and I are gearing up for the 5am nuptials of William and Kate! We are so excited. I cannot wait to see THE DRESS!!!




I plan to serve tea and sconces on the big day. I will share my scone recipe when I decide on "the one."

Good Friday



He is risen!

Tonight our church will show The Passion of The Christ. My husband and I are planning on going. I have never seen this movie...  I want to. I have avoided it for so many reasons... I am ready to face it. I know it will be hard.

Sunday we will go to church, then I am having my family over for a traditional Easter lunch and egg hunt. My sister in law and I are serving:

Ham
Green Beans
Broccoli Casserole
Deviled Eggs
Potato Casserole
Yeast Rolls
Coconut Cake
Banana Pudding
Sweet Tea

As you can tell, I am from the south and am in store for one big carb-fest!!!

Culprit!!!

My sweet daughter was involved in an accident today!! She is going to be okay (Thank you, God!) She  was playing at a friend's house when she was the accidental target of her friend's brother's blow dart gun!!!! The dart stuck in her head OMG ~ My sweet girl had to pull the dart out! Yes!! I know!!!! To make a long story short, She received 7 staples at the ER. Even though it was a Bad thing to have happen, it could have been much worse.

I thank God he was watching over my baby today!

Bow Tie Chicken Pasta




This is a great, easy recipe I often make for my family.

Bow Tie Chicken Pasta

2 cups bow tie pasta, boiled
3-4 boneless, skinless chicken breasts (I chop the chicken in small pieces and cook in a bit of olive oil.)
1/4 cup celery, chopped
chopped green onions to taste
1/2 tsp. garlic salt
1/4 cup parmesan cheese (optional)

Boil pasta, drain, set aside
Cook chicken , set aside
Saute celery and green onions in a small bit of olive oil until tender
Add pasta, garlic salt and a bit more olive oil, stir and cook 2 to 3 minutes
Add cooked chicken, stir and heat 2 minutes.
Top with parmesan cheese if desired.

Goes great with crusty bread
Serve over salad if you l ike with ranch dressing.

Disney ~ 2011

We had the most magical time on our Spring Break trip to Orlando. We began our fun at Universal Island of Adventure. The main attraction was Harry Potter's Hogwarts and Hogsmeade. It was amazingly real!. The shops, the food (we had butter beer and pumpkin juice.) We couldn't leave without a wand and a robe, which my son loved so much, he fell asleep in.

The second park we visited was The Magic Kingdom. Oh my. We had not been since 2007 - loved every minute of our day. The weather was perfect, the lines were manageable since we used our fastpass tickets. The food was even good. Also, Downtown Disney is a must!! Great food, fun and shopping.

I can't wait to go back, y'all!
